Kimchi soup as per Maangchi’s recipe – although I swapped the pork with minced beef, and skipped the tofu as we are not too keen on it. Turned out absolutely amazing, and the leftover is even more amazing after a day once the flavors have all soaked through! This dish has been a stable in our household ever since!
