I made your delicious 됀장찌개 for meatless Monday by just leaviChng out the anchovies and shrimp and leaving the skin on the russett potatoes and adding some 고추가루. It still turned out delicious! So there is an option for Vegans. And yes I dumped the rice in!

Hi Maangchi! I didn’t become a vegan but I do cook vegan dishes occasionally for health and to make a statement for the environment. I participate in Meatless Monday to support my vegan friends and Korean food is my “go-to” cuisine for flavorful vegan dishes! :-D
